Dairy exerts a huge shear force on the fat balls at a high speed through the narrow slit in the homogeneous head, which deforms, elongates, and crushes the fat balls.

While the dairy liquid accelerates in the gap, the static pressure can decrease and may drop below the vapor pressure of the fat, which produces an air cavity phenomenon, so that the fat balls are subjected to a very strong blasting force.

When the fat sphere hits the homogeneous ring at high speed, it will generate further shear force.
